I continue to tell myself that I’m going to dive deeper into the Cherry Creek food scene. My visits are few and far between. On one hand, this is sad because it’s obvious I need to venture outside the downtown area. On another hand, it’s exciting to know that there are some untapped food offerings less than three miles away from me. SOL Mexican Cocina is one of those restaurants I’ve been missing out on. But I finally paid this Baja inspired concept a visit. Here’s are a few highlights from happy hour.
Location, location, location! SOL is nestled on one of the busier streets in the Cherry Creek Shopping District. This makes it perfect for attracting walking traffic and those cruising by. The abundance of seafood offerings is what drew me to their menu. That coastal flare is represented throughout their food and drink offerings. We dined during happy hour and it was perfect getting quick service right before the dinner rush. Our meal consisted of:
Beer Battered Fish Taco
Hot & Raw Ceviche
Grilled Sweet Corn
We devoured it all. One standout item was the Ceviche with fresh citrus, habaneros & tropical fruit, with sweet potato & beet chips. I’ve never had the privilege of having a beet chip until this dining experience. I need these in my life on a regular basis! My favorite item was the Grilled Sweet Corn, also known as Elotes. It was carved tableside a topped off with a chipotle sauce, cotixa cheese, chile, lime, and butter. I could literally taste the smoke in the flavor. The tableside services always earns bonus points!
SOL Mexican Cocina is a true gem. Being that it is a concept that has multiple location I wasn’t sure how great the food would be. I was pleasantly surprised. The food was awesome and the service was second to none. The entire staff, including management, was super attentive. The restaurant’s layout is perfect for dining groups of all sizes. It can accommodate large groups or solo diners. I’m looking forward trying out their brunch offerings. FroMo’s on deck.
